I love slow cooked meat. I especially love slow cooked meat with wine! This pot roast when paired with Pinot Noir and seasonings is delish! It's great when served with a side salad or potatoes and a nice glass of Pinot! Summer or not, slow cooker meals are easy and yummy!

| Heat the olive oil and put meat in a skillet to sear. |

| Season the meat with salt, pepper and garlic powder. |

| Sear both sides until nice and dark brown. |

| Remove the roast from skillet and place in slow cooker. |

| Remove roast from pan and put onions and garlic in the same skillet. Saute for 5-10 minutes until soft. |

| Pour in the pinot to deglaze the pan. Use a whisk to scrape all the yummy stuff off of the bottom of the pan while simmering for a minute or two. |

| Pour onions into cooker and add remaining ingredients. I decided to chop up the whole tomatoes, you can leave them whole or chopped, whichever you like better. |

| I cooked this on high for 2 hours, then on low for 4 additional. This is how it looked when it was done. |
Pinot Pot Roast

Ingredients
3-4 lbs boneless chuck roast
1 large red onion, diced
3-4 cloves garlic, minced
1 cups pinot noir (or other red wine)
1 cup beef stock
1 28oz can of whole tomatoes, drained
1/2 cup barbecue sauce
1/4 tsp garlic powder
1 tsp fresh ground pepper
sea salt to taste
1 T olive oil
Directions
Season roast with garlic powder, salt and pepper. Heat olive
oil in large skillet or dutch oven. Brown roast on both sides. Remove from pan
and sauté garlic and onions in same pan. Deglaze the pan with wine and let
simmer for a minute or two while scraping bottom of pan with whisk.
Place pot roast in slow cooker or dutch oven. Pour wine and
onion mixture over and add the remaining ingredients.
Cook on high for 2 hours, then reduce heat to low and cook
an additional 4 hours until soft and falling apart.
Serve with your favorite potatoes and veggies or salad.
