CHEESY CHICKEN SPAGHETTI BAKE

I was in the mood to make something warm and hearty for my family since it's so cold outside, so tonight we are having chicken spaghetti! I have an 8 year old that eats about 5 things and this had been added to the list making it 6! It's super yummy and easy to make. The recipe calls for items that are already diced or cooked, so you can do this in advance, even the day before to save time.



Everything you'll need to make your yummy creation 
Put cooked spaghetti in large pot or bowl and add chicken and soup. Stir to combine. 
Add all remaining ingredients, reserving about 1 1/2-2 cups of cheese for the top.
Stir to combine well.  
Pour into a 13x9 casserole dish and spread out evenly with spatula.  
Spread remaining cheese over the top. 
Bake at 350 degrees for about 30 minutes until it looks like this. All warm and bubbly. 
Remove from the oven and let it sit for about 10 minutes. 
Plate and serve with some garlic bread and a side of veggies. Delicious!!
 Cheesy Chicken Spaghetti Bake


Ingredients
2 cups cooked chicken, cubed
1 lb package uncooked spaghetti noodles (I used whole wheat)
2 cans 98% Fat Free Cream of Chicken
4 cups grated cheddar cheese, divided
1 (14.5 oz) can diced tomatoes
1/4 cup onion, diced
1/4 cup red bell pepper, diced
1 t seasoned salt
Dash of cayenne pepper (optional- use if you like a little bit of heat!)
1 cup chicken broth

Directions
Break noodles in half and cook according to package directions. Place cooked noodles into a large bowl. Add chicken and toss together. Add cream of chicken soup, chicken broth, onions, bell peppers, tomatoes, 2-3 cups of cheese, seasoned salt, and cayenne pepper. Mix all together. Pour into a 13x9” baking dish and spread evenly.  Top with remaining of cheese. Bake at 350 degrees for 30-35 minutes (or until hot and bubbly). Remove from oven and let rest for about 10 minutes and serve.

** Add-ins. Olives, mushrooms, green peppers, bread crumbs, bacon, parmesan.
