EGG SALAD SANDWICHES


We like to have egg salad sandwiches once in a while and I make them whenever I have eggs that are getting close to the date, I'm a stickler when it comes to the expiration dates. Today was one of those days.












Everything you'll need to make your sandwiches, except the bread, oops.


Slice up the eggs

Add the eggs to the bowl with all the other ingredients, stir and voila, egg salad!

Ingredients
  • 6 hard boiled eggs (You can see how I boil my eggs here: Hard boiled eggs )
  • ½ cup mayonnaise
  • 1 tsp prepared mustard
  • 1 T sweet relish
  • salt and pepper to taste
  • 1/8 tsp or a pinch of garlic powder

Directions
Cut the eggs into bits, place in a bowl
Add remaining ingredients and stir.
Put on bread and enjoy!

If you want to make these into finger sandwiches, cut the eggs into smaller bits so that it's not so chunky, use thinly sliced bread and spread on a thin layer. Add the top piece of bread and cut the crust off. Cut into halves or quarters and you've got finger sandwiches!
