RED WINE TOMATO SAUCE

I love this sauce. It's great with any pasta. I use it when I make Manicotti, which I'm doing tonight (recipe to follow). The red wine gives it a great flavor along with the red bell pepper and onion. It's an easy sauce to make and tastes oh so yummy!










Here's everything you'll need.

I like to use both olive oil and butter. Heat oil an melt butter.

Chop onion, garlic and red bell pepper. (Remember to remove the little sticky label from the red bell pepper. I learned this the hard way that picking little paper pieces out of the sauce isn't any fun...)

Saute in olive oil and butter until soft. Don't cook too long or they'll just be mush.

Add the tomatoes to the onion mixture. Stir.

Add the red wine. (My favorite part) Stir.

Add the seasonings. Stir.

Here is how it should look when it is all done. Let simmer at least 30 minutes on low. I like to cook mine for at least an hour if I have the time. 30 minutes will do if you're pressed for time.

Ingredients
  • 1T butter
  • 2T olive oil
  • 1 large onion (yellow or white) diced
  • 3 cloves of garlic diced
  • 1 red bell pepper diced
  • 1 28oz can of crushed tomatoes in puree
  • 1T dried basil 
  • 1tsp Oregano
  • 1/2 tsp Marjoram
  • 1T sugar
  • 1 tsp salt. 


Directions


Heat the butter and oil. Saute the onions, garlic and red bell pepper until soft. Add tomatoes, red wine and seasonings. Stir well and allow to simmer for at least 30 minutes. Then put on your favorite pasta or chicken dish. Mmmmm
